Crunchy Apple Slaw

Ingredients:
  • 1/2 cup salad dressing (such as Miracle Whip)
  • 1 Tablespoon granulated sugar
  • 2 Tablespoons brown sugar
  • 1 Tablespoon apple cider vinegar
  • 1 Tablespoon lemon juice
  • 1/2 green cabbage, shredded
  • 1 red apple (Braeburn preferred), unpeeled and diced
  • 1 green apple (Granny Smith preferred), unpeeled and diced
  • 1 Tablespoons chopped green onions
  • 1/4 cup sliced almonds
Directions:
  1. Mix together the salad dressing, sugars, vinegar and lemon juice in a large bowl. 
  2. Add the remaining ingredients and toss to coat. 
  3. Cover and chill before serving.

Puppy Chow Krispies

Ingredients
  • 2 cups semi-sweet chocolate chips
  • 3/4 cup peanut butter
  • 4 cups crispy rice cereal
  • 1 cup miniature marshmallows
  • 1/2-3/4 cup sifted powdered sugar
How to Make
  1. Line a 9x9 pan with foil and spray lightly with cooking spray. Set aside.
  2. Over a double boiler, melt chocolate chips. When melted, remove from heat and stir in peanut butter until incorporated. (I used the microwave and melted in 30 second increments for the first minute and then 15 seconds after until completely melted.)
  3. Stir in your crispy rice cereal until it's evenly coated with chocolate/peanut butter mixture.
  4. Stir in your miniature marshmallows.
  5. Press into prepared pan.
  6. Sift powdered sugar over top of krispie treats evenly.
  7. Chill in refrigerator for 30 minutes until chocolate is set.
  8. Cut into squares and serve at room temperature.

Recipe #10 March 8, 2013

Pineapple Fluff

My best friend Amy gave me this recipe for my bridal shower almost 5 years ago.  I tried making it about 4 years ago and I did something wrong because there was no "fluff" so I gave it another shot and boy was it delicious!! I doubled this recipe to make in a 9x13 pan.

Ingredients:
1 1/2 cup coarsley crushed pretzels
1/2 cup butter - melted
1 cup sugar
8 ounces cream cheese - at room temperature
1 can (20 ounces) crushed pineapple
1 tub (8 ounces) cool whip

Directions:
1. Preheat oven to 400.
2. Drain pineapple WELL.... squeeze out all the juice possible using a strainer. I let sit for over an hour too.
3. Mix together crushed pretzels, melted butter, and 1/2 C of sugar.
4. Evenly spread this mixture on the bottom of a 9 x 13 baking dish. I lightly greased the pan. Bake for 6-7 minutes.  Watch carefully because it will burn quickly.
5. In a large bowl, beat together cream cheese and 1/2 C sugar until creamy.
6. Stir in crushed pineapple and cool whip.
7. Spread over the pretzel crust.
8. Top with additional crushed pretzels if desired. I topped mine with some strawberries!

*Amy mentioned you can use reduced fat cream cheese and light cool whip if desired.  You can also half the amount of butter and sugar and it's still great.
